Biga vs Poolish for Pizza Dough

I get asked this a lot once someone has a straight dough they like: should the next upgrade be a biga or a poolish? Same idea in both cases — ferment part of the flour ahead of the final mix — but the feel in the bowl is different, the math is different, and the internet loves to pretend each one is “required” for a style.

This piece is a preferment comparison for home pizza makers. It is not a full dough recipe, not a hydration percentage guide, and not a sourdough-vs-yeast hub. What preferments are (and what this article is not)

A yeasted preferment is a portion of the dough’s flour and water, plus a small amount of yeast, mixed and fermented hours ahead of the final dough. King Arthur’s pro reference puts it plainly: preferments can be stiff or liquid, yeasted or wild-yeast, and may or may not include salt. Classic biga and poolish formulas almost always leave salt out of the preferment and put it in the final mix.

That is different from a sourdough starter / levain, which is a maintainable wild-yeast culture you feed on a schedule. Preferments here are one-shot builds with commercial yeast. I am not expanding into starter maintenance in this URL.

What this article will not do:

  • Hand you a complete ball formula (flour + salt + schedule for a named style)
  • Rank biga as “always better” than poolish, or the reverse
  • Declare that Neapolitan “must” use one or the other
  • Invent a single true hydration for biga

What is a poolish?

Poolish is the easy one to define. By definition it is equal weights of flour and water100% hydration — with a small portion of yeast and no salt. King Arthur, ASBE, and Serious Eats all land on that same equal-parts framing. In the bowl it looks like a thick batter: pourable, sticky, full of bubbles when ripe.

Hydration and consistency

100% hydration means if you preferment 200 g of flour, you also put 200 g of water in the poolish. Total dough hydration still comes from all the water in the formula (preferment + final mix), so the poolish is not “making the pizza wetter” by itself — it is parking half of some flour’s water early. Yeast, time, and temperature

Yeast in a poolish is intentionally tiny and scaled to time and temperature. ASBE’s inoculation tables (around dough temps in the high 70s–low 80s °F) show the pattern: less yeast for longer room-temp builds, more yeast for shorter ones. Pizza Today’s Arena example uses about 0.25% yeast on poolish flour. King Arthur discusses ripening windows often in the 8–16 hour production range; other trade write-ups span roughly a few hours to overnight, sometimes with a fridge hold after an initial room-temp rise.

Ripeness cues I trust from KA: the surface is covered with small bubbles, gas is breaking, and the aroma is pleasantly tangy — not sharp ammonia, not collapsed and sour in a bad way.

What is a biga?

Biga is where the arguments start — and where most pizza blogs quietly pick one number and sell it as law.

Stiff preferment — and why hydration numbers vary

In King Arthur’s stiff-vs-liquid framework, biga sits with the stiff yeasted preferments. ASBE describes it as a stiff preferment, usually about 50–60% water absorption, flour/water/yeast only, originally used in part to strengthen dough. BAKERpedia echoes that 50–60% band, with ferment guidance around 8–16 hours at 15–20°C (59–68°F), ripe when domed and just beginning to recede in the center.

But that is not the only story in reputable sources:

Serious Eats’s pizza preferment tip sheet is useful here for a different reason: it documents that baking books disagree, with biga hydration cited anywhere from roughly 60% toward 100%, and notes that something near equal flour and water should just be called a poolish.

So I do not teach “biga = 45%” or “biga = 60%” as a single truth. I teach a spectrum. When a recipe says “biga,” read the water line. A Giorilli-style stiff biga and a 65% trade biga are both “biga” in print and very different in the bowl.

Yeast, time, and temperature

Common professional ranges (label them as ranges, not law):

  • Yeast: ASBE/BAKERpedia — fresh roughly 0.8–1.5% of biga flour, or instant around 0.1%. Giorilli’s published example uses 10 g yeast per 1 kg flour (1%). Pizza Today’s Arena example uses 0.5%.
  • Time / temp: ASBE/BAKERpedia 8–16 h at 15–20°C. Giorilli 16–20°C. Caputo/Orlando formula 18–24 h at room temp. Some cookbook methods land closer to 6–12 h.

Ripeness on a stiff biga is easier to see than on a batter: it domes, then the center just begins to settle. Giorilli’s school note that matters for home mixers: if the biga blows up hard, it was often overworked — the method wants a closed-but-not-fully-developed gluten network, not a fully kneaded dough.

“Biga” as a generic Italian term vs stiff biga in practice

King Arthur’s pro page makes a nuance I wish more pizza posts repeated: in Italian usage, biga can generically mean preferment — stiff or loose. In North American baking shorthand, “biga” usually means the stiff yeasted one. When I say biga in this article, I mean the stiff-to-firm yeasted preferment on that spectrum above — not a 100% batter wearing an Italian name.

Side-by-side: how they change pizza dough

Tendencies, not commandments. Preferments change gluten feel, fermentation head start, and aroma. They do not rewrite style laws.

Strength vs extensibility / workability

Stiff biga sources (ASBE, BAKERpedia) emphasize strengthening / improving gluten functionality. That is the historical job description. ASBE also warns the flip side: with stronger flour, a stiff biga can hurt extensibility — the dough fights you. Higher final hydration or an autolyse can rebalance that. Poolish tends the other way: more extensibility, softer handling, often easier machining. King Arthur discusses that extensibility boost in bread contexts (baguette logic). ASBE notes protease activity in wet preferments can reduce mix time and soften dough. Migoya (quoted in secondary Modernist Pizza coverage) points out a practical truth every hand-mixer learns: a wet poolish is easier to incorporate than a stiff biga, and a shorter mix / less mechanical development can leave a more open look in the crumb.

I treat those as tendencies. I do not claim “poolish always gives airier pizza crumb” without a controlled pizza bake-off in front of me.

Flavor and aroma

Preferments in general build organic acids and esters — King Arthur’s language is superior flavor, subtle wheatiness, aromatic tang. Poolish often gets described as nutty (KA); some bakers add buttery/nutty language. Biga often gets floral / aromatic (KA) and “complex from long ferment” (ASBE).

What I will not do: paste a yogurt-vs-vinegar lactic/acetic scoreboard from competitor pizza blogs and treat it as chemistry gospel for commercial-yeast preferments. Wet vs stiff can shift acid balance in a baker’s experience (Forkish-style framing shows up in secondary write-ups), but Perfect Loaf–style lactic/acetic tables are largely sourdough starter chemistry. Different animal.

Crumb, browning, mix time

Preferments help structure, flavor, and keeping quality in the broad KA sense. ASBE notes poolish contributes amino acids that feed Maillard browning on the crust. Shorter final mixes after a preferment show up in both Migoya commentary and Tom Lehmann’s pizza sponge guidance — you have already developed some of the dough’s story overnight, so do not knead as if you started from raw flour and water.

Again: browning and crumb are also oven, flour, sugar in the flour, and total hydration. Preferment type is one dial.

Cold ferment / next-day use

Pizza Today describes both biga and poolish as commonly refrigerated for next-day use, pulled about an hour before mixing into the final dough. Caputo-channel contemporary Neapolitan with biga allows balling then a room-temp finish or a fridge hold with a temper. Sample poolish methods in trade write-ups sometimes cold-ball the finished dough overnight.

I use fridge holds on prefermented doughs the same way I use them on straight doughs: as schedule control, not as a magic preferment-specific chemistry claim. When bakers reach for biga vs poolish

Frame this as recipe tradition and dough goals, not commandments.

What I treat as supported / cautious:

  • Giorilli (Accademia): which is better depends on the breads/pizzas and the result you want. In that contrast, poolish is often discussed around roughly one-third of the flour; biga can run from about 20% up to 100% prefermented flour.
  • Modernist Pizza (via secondary quotation): poolish is common among North American professional pizza makers; many Italian pizzaioli still prefer direct (no preferment) doughs. That alone kills the “authentic Italian pizza always uses X preferment” myth.
  • Caputo-channel contemporary Neapolitan formulas with a stiff ~45% biga exist in distributor recipes. So “Neapolitan = poolish only” is also false.
  • ASBE: biga historically for strength; useful thinking when you want more gluten backbone (including some high-hydration breads). Watch extensibility on strong flour.
  • KA: poolish ↔ extensibility; biga ↔ aromatic Italian-bread tradition (ciabatta gets called out in that framework).

What I refuse to publish as Insider fact:

  • Blog style maps that conflict with each other (some SERP posts say poolish→Neapolitan and biga→NY; others reverse it toward canotto/Neapolitan biga and poolish for thin/NY). Unverified opinion, not our claim.
  • Marketing slogans that “biga is better.”

My home defaults, as tendencies: if the dough felt slack and I want more backbone — and I am willing to tear a stiff preferment into pieces — I reach for a stiffer biga. If I want easy incorporation and a dough that opens under the hands, I reach for poolish. For a first preferment experiment on a dough I already like, I usually start with poolish because the mix-in is friendlier. Style name on the menu does not decide it for me — the Neapolitan dough recipe page is style context, not a preferment commandment.

Converting a straight dough (and swapping preferment types)

Baker’s math, not a new recipe. ChainBaker’s preferment conversion guide is the clearest step list I point people at for the arithmetic (bread-general; the math still applies).

Straight dough → preferment

  1. Know the total formula: flour, water, yeast, salt, and overall hydration.
  2. Choose a prefermented flour % — how much of total flour lives in the preferment. Common practice ranges you will see: roughly 10–20% in many breads; pizza-trade and school sources often discuss ~30–33% and higher; some biga methods (Giorilli; ChainBaker notes) allow up to 100% of flour prefermented. That last one is a technique option, not a home default.
  3. Build the preferment:
    • Poolish: preferment water = preferment flour (100% hydration). Yeast often tiny — ChainBaker cites on the order of ~0.08–0.1% of preferment flour for long room-temp builds; other examples use higher inoculations for shorter windows.
    • Biga: preferment water = preferment flour × chosen biga hydration (use the recipe’s number; ChainBaker examples often sit ~50–60%).
  4. Final dough = total formula minus the flour, water, and yeast already in the preferment.
  5. Salt stays in the final dough (classic biga/poolish are unsalted).

Pizza Today’s practical reminder: when you add a preferment, count its flour and water in the formula math, adjust salt for the full flour weight, and you can often reduce (sometimes eliminate) yeast in the final mix because the preferment already carries yeast activity.

Tom Lehmann’s PMQ “acting poolish” / sponge-and-dough note is pizza-specific but not classic overnight 100% poolish: take a large share of flour, all the yeast, and water equal to about half the sponge flour, ferment a few hours, subtract that water from total absorption. Useful as “how pros bolt a preferment onto pizza dough,” distinct from a long poolish.

Swapping biga ↔ poolish (hydration math)

Fact (math): Hold prefermented flour weight constant and change preferment hydration, and you move water between the preferment and the final mix. Example pattern:

  • Same 100 g prefermented flour
    • Poolish @ 100%100 g water in the preferment
    • Biga @ 60%60 g water in the preferment → you need 40 g more water in the final mix to keep total dough hydration the same

Inference (not a guarantee): Sensory outcomes of that swap are not locked by the math. Gluten development, acidity, timing, and incorporation still differ. Do not expect “swap and get identical pizza.”

No “winner” column. That is intentional.

FAQs / misconceptions

Is one always better?

No. Giorilli says it depends on the pizza and the result you want. I agree. Better for your dough means better for the handling and flavor you are chasing, not a universal trophy.

Does authentic Neapolitan require biga? Or poolish?

No. Caputo-channel contemporary Neapolitan with stiff biga exists. Modernist notes many Italian shops use direct dough. Preferment is a technique choice, not a passport stamp. Use the Neapolitan dough article for style process — not as proof that preferment type is mandatory.

Is this a dough recipe?

No. This is a comparison and conversion explainer. Take a formula you already trust (or build one from our style recipes), then move a share of flour into a preferment with the math above.

Is biga or poolish the same as sourdough?

No. These are commercial-yeast preferments. Sourdough is a maintained culture. Link out and keep the lanes clean: sourdough pizza dough.

What is the “correct” biga hydration?

There isn’t one universal number. Report the spectrum, match the recipe you are following, and if a writer says “biga” at 100% hydration, that is poolish wearing a costume.

Will a preferment fix my stretch tears?

Maybe help, maybe not. Extensibility from a poolish can help some doughs open; a stiff biga on strong flour can make others tighter. Technique still matters — how to stretch without tearing. Hydration and rest usually matter more than preferment branding.

Can I fridge a poolish?

Trade practice often uses room-temp ripening, then optional cold hold. Some blog posts warn against cold poolish for flavor reasons; I treat fridge timing as recipe-specific, not settled science. Follow the schedule of the formula you converted from, and watch ripeness cues more than the clock alone.

Health / digestibility claims?

I am not making any. Longer fermentation can change dough character; that is not a medical claim.

What I actually do

First preferment on a dough I already like: poolish, about a third of the flour, overnight at cool room temp if the kitchen cooperates, salt only in the final mix. Easy to stir in. Easy to see when it is ready.

When I want a stiffer preferment and I have mixer time: biga in the 45–55% neighborhood, torn into pieces, same salt-in-final rule. I read the water line every time instead of trusting the word “biga.”

I do not pick preferment type by pizza style name. I pick it by how I want the dough to feel under my hands tomorrow — and I keep total hydration honest with the 60–80% hydration guide.
